Calasparra rice is one of the most famous paella rice in Spain, and it is original from Murcia. Very similar in characteristics to bomba rice, calasparra is an round grain rice, with a pearly white colour. It grows up to 60% longer and thicker. It absorbs three times its volume in water as opposed to the average rice grain, which absorbs only twice. This means it absorbs more flavour and does not stick together. For its characteristics, calasparra rice stays whole and firm, has a great taste, and it is harder to get stodgy if overcooked.
