Bay and Laurel are two small trees that belong to the same family. Bay and Laurel leaves are similar in appearance, aroma and taste, but if you are cooking Spanish or other Mediterranean foods you will find that laurel fits better and enhances the taste. It is an essential herb in stews, sauces and marinades, and it´s used in those preparations that allow the laurel to slowly liberate and impregnate the dish with its taste. Remove the leaves before serving.
