Vinification and ageing:The grapes are collected manually in boxes of 10/15 kg. Transported to the cellar with great care, moving to a cold room 24 hours at 6ºC. Later it is selected at the table, choosing the best grapes before covering up and vinification. The fermentation takes place in a period of 8 to 10 days, not exceeding the temperature of 24 / 26ºC. The wine remains in contact with the skins in maceration, for a period between 10 and 15 days. Red wine aged 12 months in American and French oak barrels.
Pairing:Steak with mushrooms, hare, partridge, leg of suckling kid, lamb, smoked meats, stews and rice with meat. Fish such as casserole hake, salmon, cod and bluefin tuna. Smoked, blue cheeses and in general cured cheeses. Service Temp.: 14º-16º Alcoholic degrees: 15% Vol
The winery:BODEGAS LUZÓN: is one of the main producers and exporters of quality wines of the D.O. Jumilla, and one of its most historic wineries, producing wine since the late nineteenth century. Jumilla, Murcia: The wine-growing area of Jumilla is located southeast of Spain, north of the region of Murcia. The climate is continental, influenced by the Mediterranean Sea with warm days, rains that do not reach 300 litres per square meter, and cold nights. The result is a harsh climate, which causes a thick textured soil and allows to obtain small grape bunches, with a good concentration of sugar, excellent acidity and thicker skins. Varieties of the region: The main variety is Monastrell, a grape so characteristic in our Region. It is a variety of strong character that usually derives in wines with remarkable graduation. Other varieties are Garnacha Tintorera, a grape very planted both in the area of Jumilla and in Alicante; Syrah, Cabernet Sauvignon and Petit Verdot in terms of the red varieties, and Macabeo (or Viura) and Chardonnay in the white ones.
