100% Romé. The only autochthonous red grape of Malaga, once close to disappearing from the region.
The grapes come from five small vineyards, all of them with altitudes between 700 m and 1.000 m, in Santo Pitar, Corumbela and Sedella.
Manually picked and carried in boxes with the help of mules. At the beginning of September, the most compact and less ripened grapes are cut, leaving the rest on the vine for 2 more weeks, for further maturation and higher concentration.
Spontaneous fermentation in a 2.000-litre oak vat. Maceration with the skins for 2 months. Malolactic fermentation.
10 months in an oak vat on fine lees.
Medium violet colour. On the nose, original with many nuances where herbaceous aromas and initial red fruits give way to balsamic and mineral notes. In the mouth, fresh and elegant, with a persistent finish.
