Probably you already know membrillo: the Spanish sweet, marmalade-style compote produced from the quince (membrillo in Spanish) fruit. Thicker than the British quince jelly, it is commonly eaten as an accompaniment to cheese, crackers (regañas) or french bread.
However, despite membrillo is a preserve made with sugar, that naturally lasts for a very long time in your cupboard or fridge, most versions of this sweet contain other thickeners and sweeteners that have as a result a product with a less strong flavour, that also requires the use of other preservatives. This is a real, 100% natural membrillo, made only with quince, sugar and a touch of lemon.
