Payoyo cheese is elaborated in Cadiz with the same traditional recipe since 1997. It is elaborated with whole goat milk and enzymatic coagulation. It's semi-mature, for at least 35 days. It has a bright white colour because of its natural crust. It's creamy and has a nuts taste. Slightly acid and very tasty. Perfect to enjoy as a tapa.
