Idiazabal cheese is produced in the Basque Country and Navarra. It is made from raw latxa sheep and carranza sheep milk and matured for at least 60 days. Authentic Idiazabal is only made from the latxa and carranza sheep’s milk and has the Idiazabal D.O. seal of authenticity. Bizkor cheese is an excellent quality cheese, very appreciated by those who love cured cheeses with a deep aroma, intense flavour and firm texture. Unfortunately, we are unable to ship refrigerated products outside of our home delivery area in Edinburgh (Post Codes EH1 to EH17).
