IBERICO DE BELLOTA (ACORN FEED IBERICO HAM)

Our Iberico acorn feed hams (Iberico de bellota) are produced by Aire Sano and they have been classified as a red label ham. They come from free-range pigs that have been raised in the farms of Teruel.

Aire Sano hams produce their hams with the maximum quality standards, and following the principles of traceability and transparency.

The free-range pigs are grown in Teruel´s farms, with plenty of field for them to move, and they have been granted the ‘happy pig’ certification of animal welfare. They are under the care of highly qualified farmers, motivated and implied in responsibly farming to achieve the best quality.

They are 50% Iberico-breed and 50% Duroc-breed. Their genetics have been carefully selected to offer you a product that is high in proteins, reduced in saturated fats, with no gluten or lactose.

At Las Delicias we only have in stock the finest ‘paletilla’ (ham shoulder), which are the front legs of the animal. The shoulder has more fat than the ham, which makes it more flavourful. It’s also a smaller piece, wich takes shorter in curing which gives it a more uniform taste. The smaller size of a shoulder also makes the shoulder a more convenient piece to take home because they are easier to finish before they get spoilt (a ham or shoulder leg must be finished within 21 – 40 days after start carving them, othewise they will get dry and develop a rancind taste).

Aire Sano is the only Iberico Ham producer that has been granted the antibiotics-free certification.

This white label ham is producer that offers Iberico Ham comes from  50% Iberico-breed and 50% Duroc-breed pigs, that have been raised in the farms of Teruel.

The Iberico de Cebo pigs are grown in Teruel´s farms, with plenty of space for them to move, and they have been granted the ‘happy pig’ certification of animal welfare.

The production follows a fully traceable process to grant the highest quality standards. The pigs have been feed with noble grains produced in Teruel’s farms and cared for by highly skilled farmers motivated to produce the best meats, in a responsible and sustainable way. 

Those pigs have not been treated with any antibiotics since weaning, and they have been raised on the best habitat and feeding conditions. However, the health concept goes beyond this. The meat from Iberico de Cebo 50% Iberian-breed is high in proteins and low in saturated fats, gluten-free and lactose-free.

Its quality and taste make them the soul of all the Spanish dishes and tapas, because when things are done with delicacy and care you can only get the best.

SERRANO HAM SHOULDER IGP TERUEL (GRAN RESERVA)

Aire Sano produces those Serrano Shoulder Gran Reserva, IGP Teruel. Bearing the IGP Teruel seal means that the genetics, the feeding and the drying process reached the highest quality standards, for a delicate and rich flavour.

Teruel hams are renowned for their superior quality standards. Aire Sano carefully breeds the best landrace females with carefully selected duroc males, and grows the pigs in their Teruel´s farms, with plenty of space for them to move. They have been granted the ‘happy pig’ certification of animal welfare.

Teruel IGP cured hams and shoulders are higher in fat, which makes them tastier. SERRANO HAM

The process to make a great Serrano ham is long and requires care and many conditions in order to get an optimal result. From the breed, sex and feed of the pig to where and how was the meat cured, every detail must be carefully monitored. 

Our Serrano Hams from Los Pedroches (Cordoba) are ‘reserva’ which means they have been cured for at least 16 months, while the shoulders, being a smaller piece, have been cured for 12 months for a deep, rich taste.

The taste of a freshly hand-carved taste is equal to none, but not everybody has either the hand-carving skills, the instruments, room at home to keep a whole ham on it’s stand, or a family big enough to eat a whole ham leg within 21 days.
